- For 2 people
ingredients
- sea-salt
- pepper
- 2 heaped tsp ground turmeric
- 4 small, ready-to-cook trout (approx. 1 kg)
- 2 tomatoes (200 g)
- 2 onions (160 g)
- 1 organic lemon
- 400ml oil
Besides that
- 1 recipe amount of rice with herbs
Preparation
- In a small bowl, mix together 6 heaps tsp salt, 2 tsp pepper, and turmeric. Briefly wash the trout inside and out under cold running water, dry them with kitchen paper, and generously rub the turmeric mixture inside and out.
- Wash and dice the tomatoes, removing the stalks. Peel the onions and cut them into rings. Wash the lemon in hot water, rub it dry, and also cut it into slices.
- In a large deep pan, heat the oil over medium-high heat. It's hot enough when bubbles appear on a wooden skewer held inside. Place the trout in the hot oil, and fry on one side for approx. 10 minutes, then turn and fry for approx. 5 minutes. Finally, sear the inner sides of the trout at high heat for approx. 3 minutes, opening the abdominal cavities wide. Arrange the fish with tomatoes, onion rings, and lemon slices. This goes well with herb rice, for example.
Tips
This recipe also tastes good with other types of fish, such as carp or sea bream. But cod or salmon are also suitable for this.
