Recipe Grilled Fish, Rosemary Potatoes, and Grilled Vegetables

 Grilled fish is on the table today. There are also rosemary potatoes and grilled vegetables as side dishes. A Mediterranean, light, and summery dish. Add a cold white wine and you can beam yourself to Spain, Italy or southern France.

Recipe Grilled Fish

In addition, this dish is quite simple, since it is not about following the list of ingredients exactly. It starts with the choice of fish. I took a sea bass this time. It has firm, white meat and not that many bones. Sea bream, mackerel, and trout, for example, can also be grilled very well. Just take a look at what your trusted retailer is offering. When in doubt, it has to be the "trust yourself fish". What is that? For a "trust yourself fish" you cannot simply tell the dealer what you want, but have the courage to explain to the fish dealer what you intend to do and then get advice from him. Apparently, it's not easy for everyone. There is also “dare-you-cheese, meat, sausage, fruit and vegetables” etc. but it doesn’t matter at this point.

For the herb filling

for the fish, you can simply use whatever herbs you have at home or whatever you can get quickly. It is not necessary to use as many different herbs as possible.

The same applies to grilled vegetables. Just take what you have left and above all what you feel like. You can also vary the seasoning. For me, however, the fish is the star and so the side dishes can be relatively simple. The grilling gives the vegetables an unusual taste anyway.

For the fish:

  • Fresh, whole fish e.g. B. Sea Bass
  • olive oil
  • Fresh herbs, e.g. B: rosemary, thyme, parsley, dill
  • 1 lemon
  • 2 cloves of garlic
  • Salt pepper

For the rosemary potatoes:

  • Waxy potatoes, preferably the same size
  • olive oil
  • sea-salt
  • Fresh rosemary

For the grilled vegetables:

  • Peppers of different colors
  • zucchini
  • tomatoes
  • Fresh thyme
  • Fresh oregano
  • shallots
  • salt, pepper, sugar
  • For the gremolata:
  • Parsely
  • thyme
  • Sun-dried tomatoes
  • lemon
  • olive oil
  • 2 cloves of garlic
  • salt, pepper, sugar
